Another great late night shave. Really don’t think Nordost could ever get old - it’s just smells so good and can be used for any weather. Including the 101 degrees we had in the northeast today. Still have to have a hot shower though. For some reason, I really dislike cold ones. It was a relaxing night where I finally got around to making a beet shrub which I’ve been meaning to do. What is that you ask? Let me tell you and give you the recipe. A shrub is an acidulated, sweetened nectar of the drinking gods. Mix with liquor, top with seltzer, and add a fragrant herb for a great drink. Over ice of course.
Onto the shrub: roast 5 medium beets and blend with 0.5 cup of white vinegar and 0.5 cup apple cider vinegar. Strain. Add 0.75-1 cup sugar, teaspoon of salt, and teaspoon of peppercorns. Leave in a mason jar on the counter for a day, strain again. Ready to go or place in the fridge. Wait a week and the flavor develops even more.
